How To Cook Lobster Bisque

I’ve lived in New England all my life and have always adored lobster, but it wasn’t until I moved to Maine several years ago that I really got hooked. Lobster is king in Maine, and living in the midst of the fishing culture has inspired me to cook and eat more of it. One dish I’ve really grown

  • Preheat oven to 120C. Bring a saucepan of water to a boil over high heat. Add half the coriander and blanch for 30 seconds. Remove from water and set aside in an ice bath.
  • Fill large stock or lobster pot with 2-3 inches water, and bring to a boil. Add lobster, and cover. Steam for 10 minutes. Drain in sink, allow lobster to cool, and remove meat from claws, knuckles, and tail. Coarsely chop lobster meat.
  • The bisque is very rich, so a small serving (about two-thirds cup per person) is plenty. At the restaurant, this is baked in individual crocks, with puff pastry on top.
